"What's the recipe today Jim?"



This was an early emailed post to my family. The recipe is very simple but looks good. Great as a starter but equally welcome for lunch - maybe with some crusty bread in place of the fancy crackers.


As for the title George - ask someone old!!!

Smoked Mackerel Paté

Serves 6 as a starter

Preparation time: 5 minutes

Ingredients

3 smoked mackerel fillets 300g cream cheese 1 tbsp creamed horseradish 1 tsp paprika Slices of lemon, to serve

Method

1. Remove the skin from the mackerel and break the fish into chunks.

2. Place in a food processor with all the other ingredients, apart from the lemon. Process until you have a coarse pâté. You might have to stop the processor and scrape the sides down a few times to get all the ingredients completely incorporated.

3. Add salt and pepper to taste.

4. Serve the pâté with a wedge of lemon and flatbreads or fancy crackers.

5. You can add chopped capers (about a dessert spoon) if you have some hiding at the back of the fridge and if you’re really brave a green peppercorn or two (chopped really small).
